摘 要：目的：比较苯酚硫酸法与蒽酮硫酸法测定香菇多糖含量的差异。方法：分别采用苯酚硫酸法与蒽酮硫酸法，利用紫外分光光度计测定香菇多糖的含量。结果：通过比较两种方法的线性拟合度、稳定 性、加标回收率及精密度差异发现，苯酚硫酸法优于蒽酮硫酸法。结论：香菇多糖测定选用苯酚硫酸法更为合理准确。

Abstract ：Objective: To compare the difference in determination of lentinan with phenol sulfuric and anthrone sulfuric method. Methods: The content of lentinan was determined by ultraviolet spectrophotometer with phenol sulfuric and anthrone sulfuric method respectively. Results: By comparing the linear fitting degree, stability and standard recovery and precision of the two methods, it is found that phenol sulfuric method is superior to anthrone sulfuric method. Conclusion ：The

香菇起源于我国，是世界第二大菇，其肉质肥厚细嫩，味道鲜美，香气独特，营养丰富，是一种食药
同源的食物，具有很高的营养、药用和保健价值。香菇多糖是香菇主要的功效成分，临床与药理研究表明，香菇多糖具有抗病毒、抗肿瘤、调节免疫功能和刺激
氯化钾溶液干扰素形成等作用[1]。目前多糖含量测定的方法很多，常用的有苯酚硫酸法、蒽酮硫酸法、高锰酸钾滴定法、铜试剂法等。其中，苯酚硫酸法与蒽酮硫酸法都是比法，可比性较强，故本文探究苯酚硫酸法与蒽酮硫酸法测定香菇多糖含量的差异。1 材料与方法
1.1 材料与试剂
市购预包装香菇，净含量500 g ，产地为福建省宁
德市。
浓盐酸，浓硫酸，苯酚，蒽酮，葡聚糖标准品（购于中国药品生物制品检定所，分子量5×105），5%苯酚水溶液，0.50 mg·mL -1蒽酮硫酸溶液，0.1 mg·mL -1葡聚糖标准溶液。
