摘 要：目的：掌握三明市民间药膳使用整体情况，为三明市的药膳研究与发展提供参考。方法：运用民族植物学方法和访谈对三明市十县两区开展调查，收集相关信息，对调查结果进行整理、总结与分析。结果：通过实地调查三明市民间乡土药膳的使用情况，共收集到三明市各地区60味常用乡土药材的78种药膳验方。药膳形式多样化，主要有药膳菜肴、药膳饭点等;功效主要为滋补强身与疾病，其中常见的为清热类药膳;受众人较广，如产妇、妇女、儿童以及特殊病种人;制作方法常见的为炖煮法，使用原料药材常见的为根及根茎类，全草类次之;原料多以家禽家畜为主，辅料多以常见原料为主。 pdsc献血法 关键词：民间药膳;调查分析;三明市
Abstract：Objective：To grasp the overall situation of the relevant use of medicated diet among the citizens of Sanming，and provide reference for the future research and development of medicated diet in Sanming City. Methods：A survey was carried out in ten
aphidicicounties and two districts of Sanming City，using ethnobotanical methods to conduct surveys and interviews and related methods to collect information，and to sort out，summarize and analyze the survey results. Results：Through field investigations on the usage of native medicinal diet among the citizens of Sanming，a total of 78 medicinal diet prescriptions of 60 commonly used native medicinal materials from various regions of Sanming were collected. The forms of medicated diet are diversified，mainly based on medicated dishes，medicated meals，etc.;medicated diets are mainly used to nourish and strengthen the body and cure diseases，among which are common medicated diets for clearing away heat;the audience of medicated diets is wide，such as births，women，children and people with special diseases ;The preparation method of medicated diet is common stew，and the common roots and rhizomes of raw materials are used，followed by whole plants;the raw materials are mostly poultry and livestock，and the auxiliary materials are mostly common raw materials.
