乙醇提取蛋黄油的工艺研究

摘要:为了高效利用鸡蛋资源以及更好的开发鸡蛋黄脂质产品,本试验分别采用乙醇萃取法和氯仿~甲醇提取法提取蛋黄粉中的蛋黄油,研究了不同工艺参数对蛋黄油得率的影响。试验表明:乙醇提取的蛋黄油成品质量、得率都明显高于氯仿~甲醇提取的蛋黄油。乙醇萃 取蛋黄油试验中,温度、作用时间和料液比是影响蛋黄油得率的主要因素。随着温度的升高,蛋黄油的得率呈现先上升后下降的趋势,在50℃时达到峰值;随着时间的延长,蛋黄油的得率也是呈现先上升后下降的趋势,在30min的时得率最高;而料液比方面,蛋黄油的得率随着乙醇添加量的增加不断地增大。最后通过正交试验确定了最佳的萃取条件:温度为50℃,提取时间为25min,料液比为1:20g/ml。

Study on Extraction

Abstract:In order to use egg yolk resources efficiently and development better yolk lipid products,Oil was extracted from egg yolk powder by means of ethanol extraction and chlo
roform-methanol extraction respectively In this paper , and the parameters on the yield of yolk oil were studied. T he result showed that temperature, concentration and the quantity of ethanol added were the major factors affecting the yield of yolk . As the temperature increasing, egg yolk lipids extraction ratio rised and then decreased in 50℃ ;With the extension of time, it was like temperature, when 30min it turned up the highest value ; Rather than the quantity of ethanol , the yield of butter with the increased of adding amount of alcohol increases ceaselessly. Finally it was determined that the best extraction conditions was: temperature 50℃, time 25min and liquid-soil ratio 1:20g/ml.
