        摘 要:生物活性肽是一类结构介于氨基酸和蛋白质之间的分子聚合物,具有多种生理功能,是当前研究的热点。微生物发酵法制备生物活性肽是通过菌种在生长代谢过程中产生的蛋白酶水解底物蛋白从而制备生物活性肽的方法,其工艺简单、生产成本低、更易于产业化,应用前景广阔。该文对微生物发酵法制备ACE抑制肽、抗氧化肽、抗菌肽和免疫活性肽的研究进展以及发酵肽产物的分离纯化方法进行了综述,并对微生物发酵法制备生物活性肽的研究趋势进行了展望,为今后发酵法制备生物活性肽的进一步研究提供参考。

精密电主轴        Abstract:Bioactive peptide is a molecular polymers with a structure between amino acid and protein,which has become the focus of current research because of its several physiological functions. Biologically active peptides prepared by microbial fermentation which is a method of preparing biologically active peptides by proteolytic produced by bacteria during the growth and metabolism process hydrolysis of substrate proteins has simple process,low production cost,easier industrialization,and broad application prospects. In this paper,the research progress of ACE inhibitory peptides,antioxidant peptides,antibacterial peptides,and immunoactivity peptides prepared by microbial fermentation and the methods of separation and purification of fermented peptide products are reviewed. It will provide references for the further studies on the preparation of biologically active peptides by the method of microbial fermentation.二代身份证识别系统
